
This cake was AWESOME.....my hubby's bosses wife's birthday (with me so far) ask me for a Mandarin Orange Cake. I have never even heard of one let alone make it, but with a little help and some of this and that I created perfection once again....(see my ego might be as BIG as my hind end)
Let me see if I remember
1 white cake mix
1 small can of mandarin oranges
1 envelope of orange koolaid unsweeted
1 can of crushed pineapples
1 small container of cool whip ( you can use the bigger one if you want more frosting but the small one was plenty for me)
1 small box of instant vanilla pudding
Make the cake according to the box but instead of using water use the juice from the oranges. Add to the cake mix the koolaid and almost all of the oranges..(save a few for the top of the cake) and mix well with a blender. Cook cake according to box.
While the cake is cooking mix your pudding with the can of pineapples, when you have those combined well FOLD in your cool whip.....set in the fridge until your are ready to use it (this is sooo good all by itself)
Cool cake completely then frost your cake with the pineapple mix...add your oranges on top for decor.
She said it was the best! I tasted the cake when I leveled it to frost and it was very orangy and moist.
