Spinach Dip

One of my very best gal pal ask me to post this receipe so this one's for you kid....
(to the best of my memory)

1 box or bag of frozen spinach
1 16 oz. Sour Cream
1 c. mayo
1 bag of Knorr's veggie soup mix
1 small can of water chestnuts
1 bag bunch of green onions (opinial)

Thaw out the spinach and squeeze all the water out (this is a pain! but you have to squeeze & squeeze) I mix the veggie soup mix with the sour cream and mayo together, chop up the onions & chestnuts and mix with the sour cream mix, last I add the spinach and mix it well. Refridge it for at least 1 hour.

My favorite cracker to eat with this is Triscits.

Christmas is to much work

I feel like I have ran a marathon in the last couple of days. I want to go back to the day when I watched the calendar waiting with anticipation for Santa's return, oh the smells coming from the kitchen where my mom was ALWAYS baking goodies, and the pretty decorations that were everywhere you looked in our house, even the bathroom was never without something resembling the holidays. During those times as a child never did it occur to me how much work was put into everything. All the shopping to get just the right gift, numerous trips to the grocery store for all the baking for all those smell good goodies, the unpacking of all the decorations, putting up the tree, placing the ornaments. I finally wised up last Christmas when a co-worker wanted to know if I wanted her pre-lit tree that she couldn't get to work. Anyone who knows me knows I will take anything so I loaded it in my car saying to myself that hubby can fix it, well sure enough we put it up and hub wiggled some wire and it has worked every since saving me a lot of time string all those lights..can you say PAIN IN THE A**! This year I have been some what not on it as usual, I got the tree up but no decorations outside, they are still sitting in the boxes in the garage, I waited until Christmas Eve to bag our gifts to the boys, yes I was even to lazy to wrap a box, even had to write the boys an I.O.U for their money because no one could make it to the bank. Yea, that's bad! Started cooking at 10 am this morning and did eat until 12:30. If it had been up to me we would have had ham sandwiches, but my mom in love wouldn't have it. We had to have the five course meal, ham, turkey, dressing you know...all the trimmings! So let me wrap it up by saying this has been a rough year and maybe that explains a lot of my laziness but I would love to go back to a time in my childhood when the only worry I had was whether I was going to get a Baby Alive Doll or the Inch Worm! Merry Christmas everyone, I am off to take a nap!

Can I get a whoo whoo?

Woke up this morning determined to get things in my house done. So what did I accomplish? Nothing...laid around in my pjs until I couldn't stand to look at my hair anymore (yes I looked like Medusa with a bad hangover) so I ironed it and changed from PJS to sweats. Oh the life of luxury! Do I dare put on make up or walk around pale faced, I don't think the boys mind. How can I honestly except my 15 yr old to get out of the same lounge pants he has had on since Sat. if I don't get up and get motivated. Yes, he showers but puts those same pants right back on. For those of you who know him, you understand, for the rest of you, its a long story! Why do I let that thing called a guilty conscience override my laziness and cook them breakfast so they don't have to eat another cold BOX of cereal. (There is no such thing as a bowl of cereal around here) It must be love! I guess it"s only right not to except my mom in love to cook everything, even though I know she loves it, I get the evil eye from my hubby, which means get up and quit letting her do everything. Why...I ask? I want to be lazy and sit around eating caramel popcorn and watching Dr. Phil, I don't want to do that overloaded pile of laundry or unload that dishwasher..what the hay? Its supposed to be my vacation. Santa Claus is not coming to see me this year so its the least that I can do for myself, right? Can I get a whoo whoo?

Chicken Casserole

Okay since we spent the entire day clearing woods and raking leaves we had no choice but to throw something together quick...Since my wonderful mom in love is here she whipped up a quick casserole that my kids wolfed down within minutes while I took a quick shower...
1 box of elbow noodles
2 cans cream of chicken breast
1 bag frozen veggies (MIL prefers a can of peas but like all the veggies)
2 can cream of chicken
2 cups of cheese

Boil noodles (follow direction on box)
mix the chicken with the 2 cans of cream of chicken, mix the veggies & the cooked noodles add a cup of cheese (we like cheese) bake about 30 mins on 350. Add the rest of the cheese on top and cook for about 10 more mins or until the cheese melts.
*forgot to tell you to add salt & pepper to taste (I never measure salt & pepper)

Let it sit for about 10 mins or so (that never happens because the boys never wait that long)

We served it with french bread toasted and a side salad!

M.I.L made chocolate chip cookies for dessert...(did I mention she is the greatest)

About Me

I am a happily "sometimes" married mother of 3 boys. One in college and two in high school. I married my high school sweetheart after almost 13 yrs. apart. I have been called the thrift store queen and Martha Stewart and all that that implies. I love to cook and bargain shop. I too see treasure in someone Else's trash. Nothing gets me more excited when driving down the road and my eye catches a yard sale or when I pull up in front of my favorite thrift store. I spend hours rambling through "Junk" I am not a frilly girlie, girlie...who can when you leave with 4 men....so not one room in my house does not have something that came from a thrift store or an antique shop or yard sale. I go into speciality shop and head straight for the clearance. I refuse to pay top dollar for anything! My youngest son hates to shop with my because if something has a scratch or dent I will ask for half price off. You will not believe that most of the time I will get it for at least 20% off. I always say it doesn't hurt to ask. Can you say frugal? I guess you could say its a hobby of mine.... Yes I do have a full time job to support my habit but my wonderful hubby never complains because he appreciates the money that I save.
